Christmas Traditions – Bolo de Mel (Honey Cake)

One of the most waited traditions of Christmas is the famous Madeira Honey Cake.

Ingredients for the yeast:

  • 500 grs flour with no yeast
  • 300 grs bakers yeast
  • 3dl water

Other Ingredients:

  • 1000 grs flour no yeast
  • 350 grs sugar
  • 300 grs butter
  • 150 grs lard
  • cloves q.b (cravinho)
  • fennel q.b (Erva doce)
  • 15 grs cinnamon
  • 50 grs nuts
  • 50 grs almonds
  • lemon zest
  • 400 grs crystallized fruit
  • 150 grs sultanas
  • 15 grs baking soda
  • juice from one orange
  • 8 dl honey from Madeira cane
  • 2 dl madeira wine

How to prepare:

First you join the butter and sugar until you have a cream, join the spices, orange juice and the lemon zest.  Join the honey and the lard melted (cooked) together.

Join the flour and the baking soda and mix for five minutes. To the dough join the yeast  previously mixed and continue mixing for 3 minutes. Now join the crystallized fruit mix for an extra five minutes and let it rest for 24 Hours.

Once is done put your dough in round smeared forms and decorate the top of your cakes with almonds and nuts.

Put them in the oven for 25 minutes at 190º.

Now you can enjoy the  real Madeira delicacy for Christmas
